I think it’s the clapping and cheering I didn’t see coming. I got really close to cry like a baby and I would have been happy to let it go all out (probably would have needed it too) but man I had to keep my composure and focus otherwise I would have been of no use here
.
You can’t see it on the video but it was really close. Of course Mark with his great sense of humor saw something a little bit different. I can’t disclose it all, but something like I was clearly sobbing, wailing even, and he had to carry me inside 😂!

What to say about Kari @karikauffman, a real machine, totally on fire! You look at the transactions from yesterday, passed the few first transactions where we served the very serious appetite (coming out with 2-3 bags full), it’s like a transaction every minute or every two minutes, sometimes even 2 transactions per minute
.
Without Kari and in the emotional state and fatigue I was, I could have just freeze
.
And what can I say about all of you who took a chance and the courage to get in that line, specially the very last ones in line? Because this is a little bit before 8:00AM but Olivier @otouron sent me videos at 10:48, it’s almost the exact same thing! Crazy!!!
.
Well from the bottom of my heart I am saying THANK YOU. Thank you for the outpouring Love I have received from you yesterday, for the messages you shared with me of how these little treats had been a part of your life and created warm memories with your loved ones or teleport you to places of nice memories. Man when I hear that I know I have fulfilled my purpose. That was exactly my goal, being authentic and true to myself, and teleport you to places and time. I won it all!

You guys are the bestest customers I could have ever dreamed of and you understood where I wanted to go!
.
And well thank you for making me feel like a Rockstar yesterday, eheheh ! This is going to be a memory I will carry with me for the rest of my life

I guess there is a last day for everything and tom

I guess there is a last day for everything and tomorrow is La Belle Vie last day. Last lineup guys !!!
.
And I have baked like crazy every day, every night of this week in the midst of everything that was going on on the side, this week has been a high speed marathon and I am proud of what I have achieved, but man it’s been scary
.
I have probably make too much but I would hate that someone who’s been waiting in line get the last pastry sold right in front of his/her eyes by the person in front of him/her
.
This shouldn’t happen, some things are gonna run out faster than others but I am confident everyone should have a little treat to enjoy
.
Except the person having the very last item, if we sold out. This person is not allowed to eat it 😂😂😂!
.
It has to be framed and dated
.
Anyway La Belle Vie fam, East Plaza Tribe, GFM Tribe, UFM Tribe, Singh Meadow Tribe and if we go even farther in time Miro International School Tribe or FrenchAm Tribe, come tomorrow see us at Scottsdale East Plaza (Hayden and Roosevelt, 8AM to 2PMish or SOLD OUT) and celebrate that special day on the finish line

Kari will be here and Mark will join too, because I have little doubt that you’re going to outnumber me again a very last time before a new chapter opens for me, maybe even a total different new book
.
Don’t ask me what, I don’t know that myself, it’s a blank page and that’s exciting and that’s usually where I am the best at, in front of a blank page of paper
.
I am gonna retreat, take a good breather and reflect on what my success and achievements have been, and where I haven’t been good and need to learn and improve, stir the hat as good as I can to see what kind of rabbit comes out and see if I get excited chasing that rabbit
.
Until I don’t get a good vision and I don’t get excited (not to say obsessed by an idea), I know I still need to shake that hat
.
I mean that’s me, could be right, could be wrong, but it’s that time for me for introspection and I am excited about finally getting to sit down with myself
.

You’re gonna fly now my man and don’t forget I want this to go well for you (inside joke between us 😂😂😂)

Because yeah you’ll discover that Mark is not only a passionated and creative baker but also has a great and acute sense of humor. The kind I like!
.
We didn’t know much about each others until a few weeks ago still, but the circumstances have brought us to bump into each other and to learn to know more about each other. Totally my kind of people. Authentic, hard worker, straight in his boots, meticulous and somewhat of a perfectionist (which is not totally a bad thing for what we do), but nonetheless able to make some bold and courageous moves and hear him talk about baking and ganache montée and all the things delicious and you’ll know the guy is still totally hooked. Love the time we spent together this past few days Mark, congratulations !!!

Yep, what a Day today, what a Week and what an Adventure this all “Bakery Project” has been, WOW!
.
7 years almost day for day, La Belle Vie was incorporated on the 28th of November 2017, and time has flown very quickly since then and never I have had time to get bored, every week has been different and well so so many lessons learned on all aspects, the baking for sure cause I started with absolutely nothing and had pretty much never baked before I moved to the US, but also about running a small business that sometimes wants to push faster than what you can handle, about yourself and your limits that I way too many times pushed beyond what I should have (but that’s the thing, I have discovered my limits are very high and that can be a problem), I mean I have learned so much and I am extremely grateful for all this crazy experience
.
And now I am passing my most precious tool “The Lab”, to Mark who is going to take it from there and bring it farther and keep the music playing at a higher tempo. I love that story!
.
Thank you life for this opportunity and thank you to all of you who have helped me, supported me and make that idea become a reality 🙏🏻🙏🏻🙏🏻
