Let’s call them “Summer Hours” to keep it si Let’s call them “Summer Hours” to keep it simple!!!

For the next 5 weeks we’re going to treat the Store Front kind of like a second Farmers Market location, meaning La Belle Vie Bakery will only be open on Saturday
.
At both places: Scottsdale Store Front and Gilbert Farmers Market
.
So basically no change for Gilbert: you’ll find us at the market from 7AM till 11AM
.
And so no Store Front during the week at Scottsdale but OPEN Saturday from 8AM till 1PM as usual
.
Preorders still available for both places (I will post here again when the lineup starts to look like its final version, usually on Wednesday evening) and you will have till Friday 2PM to preorder
.
Don’t forget to preorder from the Online Store matching your Pick-Up Location, it always throws us off when someone comes to pick-up an order that’s at the other location
.
A “Rescue Lineup” for whoever didn’t have time to preorder will also be available. Better to have a preorder but you can still show up and find some goodies, unless we’re sold out which can always happen towards the end
.
On another note (and this will explain why 5 weeks), we have plane tickets!!! We’re taking off!!!
.
You still have La Belle Vie Bakery for you for another 5 weeks and then we’re visiting our family that we haven’t seen for a very long time
.
France for the Kraus crew and Canada for my best half in the bakery
.
We’ll then see you back somewhere towards the end of July with a lot to share
.
This week we’re pretty excited about our New Baby: the “Croissant Pop Tart” that some of you got to try this last Saturday (and who shared the same excitement with me after having them)
.
What is it?
.
A baked twice thin croissant crust, covered with Macaronade, on top of which we add another layer of Crystal Sugar to get that little sugar thin crust which bring it even more texture, and a filling inside
.
That’s where we’re going to have fun: Pastry Cream, Fruits, Jam, Nutella, Almond Cream, Frangipane, who knows Marshmallows maybe, you will find out…
.
Very excited about it, you can probably tell
.
They can be a little bit time consuming, so I don’t guarantee that’s a future permanent item, but they are for sure delicious 😋!
So, that’s it… . I have way passed the limits So, that’s it…

Till a certain point it’s courage, past that point it’s stupidity
.
I am in the stupidity zone right now and I need to get out of here
.
Hiring is of course what needs to happen but first I need to take that stack of puzzle pieces, that “business model” thing, and rearrange everything
.
Everyone here who has offered to help, I’d like to thank you and tell you I am not forgetting about you. You know who you are
.
What I kind of know is we won’t be able to function like we do today, with a little bit of farmers market here, a little bit of store front there, a little bit of retail, a little bit of wholesale, a little bit of preorders. And don’t take me wrong, all of these little parts have been absolutely necessary and the result of opportunities that were put my way, that I seized and which made it possible to climb the ladder
.
BUT what was working yesterday isn’t working anymore, some parts have become totally lose and out of control, I have to work like 2 or 3 and it isn’t sustainable
.
I am probably going to have to take a cutthroat decision soon, I just don’t know what
.
… and well, I don’t know what to do about this week either
.
Open? Close? Partially open? Preorders, no preorders, preorders only? I have no clue right now, but stay tunned, I am going to sleep on it and get back to you
.
Voilà Guys… just wanted to give you a heads up about what is going on and let that out of my chest

All right guys! I don’t know where this post wil All right guys! I don’t know where this post will go but I need to share something I have on my chest. I am in a very delicate situation with La Belle Vie, that can’t be explained with just a few lines here, but basically there is no way I can keep going like this
.
First I’d like to thank you ALL who came to the Market, to the Store Front, ALL of you who have been preordering from us in the past few weeks, you guys are amazing and we simply couldn’t do it without you. You are fantastic, I’ll never say it enough!
.
That ugly stack of puzzle pieces says it all. A stack of knots would have worked too. That’s where La Belle Vie is at right now. And the stack just keeps piling up
.
Basically we can bake, we got that part pretty much figured out, we pretty much know what we’re doing on that end, we have the tools, the passion to do it, the support from the most amazing family of “customers”, BUT it has become more and more complicated for us to actually handle a pastry bag over to you with the finished pastry inside
.
Like this coming week, I know we could bake for all of you (that’s Kari and I and I wish I had some space here to drop a few lines about Kari, because WOW) but I also know we won’t be able to put the actual pastries in your hands
.
There is more to it than just making pastries and bread, friends helping me prebagging before market, organizing the market, the store front, being here to give you your order or serve whatever is available for walk-ins, while I also have to be behind the computer to organize stocks, upload pictures online for preorders, preparing tags, etc, etc 
.
They are absolutely essential to La Belle Vie and sadly all this little crew preparing the behind the scene won’t be able to make it this week and the next few weeks too because of the vacation
.
And well, I am not surhuman
.
One part of my brain thinks I am, pilling up 80-90 hours every week since forever with very little recovery time in between long shifts and we all know the results: my body ends up collapsing and I am there AGAIN!

No, more seriously… that spooky thing (we’ll have less spooky ones but this one was my favorite), is actually inspired by “La Main de Nice”, a forgotten bread from Nice region in France, immortalized in a Picasso portrait by Robert Doisneau, where you see Picasso putting his hands on the table, except it’s not exactly his hands
.

We just took that traditional shape to make an Onion Bread (actually a Bacony Onion Bread, because why not), as the palm of the hand can play the role of a pocket
.
